From cherry to My Estate coffee

Before the coffee reaches the cup, the beans have been through quite a lot. Making coffee requires coffee cherries. These cherries go through a whole process before they are used as coffee beans for a fragrant cup of coffee. When the coffee cherries are fully ripe, they are at their sweetest. After the cherries have been picked by hand, they must be washed and dried as quickly as possible. This is decisive for the quality.

The cherries are placed on beds in the sun to dry. The sun dries and shrivels the cherries. They also change colour from violet-red to light beige or brown. The dried cherries rest for another two months before further processing. After resting, the cherries are hulled by machine. The dried parchment and silver skin are removed as far as possible, leaving the green coffee bean. The green coffee beans are then sorted once more to select the best beans for My Estate coffee. They are sorted by density, size and colour.
