‘Lamsoor’ is the Zeeland name for sea aster. It consists of lance-shaped, mildly salty leaves that grow in rosettes.
Also known as ‘oyster leaves’, the leaves have a slightly briny flavour that is strongly reminiscent of oysters.
Salty Fingers is a decorative but above all tasty ingredient. It has a crunchy texture and a slightly bitter flavour.
Samphire is a small plant made up of jointed, crunchy, salty stems. As they grow, the stems actively absorb minerals, including sea salt, from their surroundings. Besides saltiness, you can also taste fresh spinach or green asparagus!
Sea banana is a juicy sea vegetable that grows in strands on sandy ground. Its fleshy leaves are green, yellow and sometimes a beautiful fiery red. Sea banana has a typically spicy flavour.
Sea fennel has a piquant flavour and contains many aromatic compounds, so it should be used very sparingly. Goes especially well with shellfish and poached fish.
Discover HANOS’s fresh seaweeds from our own waters! They are harvested for you in the Oosterschelde National Park, a nature reserve with very good water quality. Seaweed is seasonal: from January to June, for example, wakame, Japanese wireweed and serrated wrack are harvested. In summer, as the water warms up, other species appear. Then De Zeeuwse Zeewierhandel cuts sea lettuce, Gracilaria and codium.
