There are several methods for making alcohol-free wine. Each affects the final taste and quality of the wine in its own way. Producers choose the technique that best suits the desired flavour profile and the quality of their wine.
The wine is heated in a vacuum, so the alcohol evaporates at a lower temperature (below 30°C). This preserves most of the aromas and flavours.
In this method, the wine is filtered through a fine membrane, separating water and alcohol from the other components. After distillation to remove the alcohol, the remaining water is returned and blended with the concentrated flavour and aroma components.
In this technique, the wine is passed through a rotating column, where the volatile aromas are captured first. The alcohol is then removed, after which the previously captured aromas are added back to the dealcoholised wine.
