On the north-west coast of Scotland, in an area of high natural value, lies Loch Duart: the last independently operating salmon farm in Scotland. Since 1999, the company has focused on farming salmon with quality at its core, guided by the principle that care and quality go hand in hand.

What makes Loch Duart different?

Loch Duart salmon is directly related to the wild Atlantic salmon of Scotland and is a heritage strain. This specific strain has been selected for characteristics typical of wild salmon: a streamlined, torpedo-shaped build, clear eyes and an even skin texture. This genetic line is exclusive to Loch Duart and forms the basis of the fish’s flavour profile and structure.

Specially developed feed

The feed for Loch Duart is formulated exclusively for this farm. Its composition is based on the natural diet of wild salmon and contains a high proportion of marine proteins. The raw materials largely come from MSC-certified by-products of fish processing. No synthetic colourings are added.

How Loch Duart works

Small-scale farming:
The ratio is around 1.5% fish to 98.5% water. This low stocking density gives the salmon room to swim in natural currents.
Naturally raised:
The salmon grow slowly and are not treated with antibiotics or hormones. Handling is kept to a minimum. Natural methods, such as freshwater treatments and cleaner fish, are used to maintain fish health and water quality.
Low environmental impact:
Production takes place in small-scale farms with a limited ecological footprint. The feed causes 57% less CO₂ emissions than standard salmon feed and, using MSC-approved by-products, requires 0.33 kilos of wild fish to produce 1 kilo of Loch Duart salmon. This helps preserve the ocean’s limited resources.

Quality characteristics

Flavour: a savoury flavour profile reminiscent of wild salmon.
Colour: coral orange, achieved with carotenoids (Panaferd®), without synthetic colourings.
Texture: firm and meaty, with a compact structure, thanks in part to the feed and swimming space.
Fat structure: even fat marbling with subtle fat lines. Suitable for preparations such as pan-frying.
Finish: clean and pure, without an oily residue.
Omega-3: naturally rich in omega-3 fatty acids.
Freshness: harvested in the morning, immediately chilled on ice and processed the same day to customer specification.

Ikejime Quality™

Loch Duart uses the Ikejime Quality™ method at harvest. This Japanese technique reduces stress in the fish and helps preserve flavour, texture and freshness. As a result, the salmon is suitable for uses where structure and purity matter, such as sashimi and sushi.
