In the largest slow-cook kitchen in the Netherlands, Daily Fresh Food prepares sous-vide dishes on a large scale using autoclaves. “An autoclave is essentially a very large water bath in which vacuum-packed food is cooked at a precisely controlled temperature. This means the products do not come into direct contact with the water. The water trickles into the bath, ensuring gradual and even cooking. Temperature is an important factor. Everything is cooked for a longer time at a relatively low and constant temperature. This preserves not only the vitamins and minerals, but also the colour, texture and flavour.”
